Five Sweet and Healthy Strawberry Dessert Recipes

The sun is coming out, the rain has just about subsided and the days just keep getting warmer. For many college students this is the best time of the year because school is coming to a close and summer has arrived. Well, tanned skin and sleeping in on a Monday are not the only great things about summer -  it’s strawberry season.

Strawberries are juicy, refreshing and perfectly sweet. Did you know they are also jam-packed full of nutrients? That’s right, strawberries are a great source of vitamin C, an antioxidant, and manganese. They also contain dietary fiber, iodine and folate. To top it off, strawberries also contain potassium, biotin, phosphorus, magnesium and vitamin B6. That’s a lot of nutritional goodness in a few delicious bites.

College Lifestyles™ wants you to have the sweetest summer ever – and a little extra nutrients wouldn’t hurt either. So we’ve come up with five sweet and healthy strawberry desserts that we’re sure you’ll love.

Strawberry Almond Tart

This dessert is a definite crowd pleaser for your graduation party or the annual summer barbecue. Sitting in a graham cracker crust, it is filled with low-fat cream cheese, a dash of sugar, a little melted butter and some water, making a smooth and creamy middle. This is topped off with about six cups of strawberries, lemon juice and crunchy toasted almonds.

Fizzy Strawberry-Mint Limeade

Sometimes you just need to drink your dessert and this sparkling limeade is perfect to quench your thirst and satisfy that sweet tooth. To make, you’ll need about 3 cups of sliced strawberries, lime juice, fresh mint, agave nectar and a bottle of sparkling water, wine or ginger ale. You’ll place these all in a blender and mix until your heart’s content.

Strawberry-Ricotta Napoleons

Looking for a crunch that also keeps it sweet? You have to make this dessert as soon as possible. To make, layer crispy phyllo dough, creamy ricotta and honey. Either include sweet and juicy strawberries in the layers or place them on top – you really can’t go wrong. Let us know when you make it; we’ll come over.

Strawberry-Rhubarb Ice Cream

Now that you’re in college, or almost out of it, it’s time to take that classic kid dessert up a notch. With 2 cups fresh rhubarb and 3 cups strawberries, you’re going to be seeing red. What makes this dessert so adult is the 1/3 cup fruity red wine that is incorporated. However, you can easily make a non-alcoholic version by swapping the wine for cranberry juice. Blend all ingredients together and place in container to freeze for a few hours. Throw it atop a waffle cone or take two scoops in a bowl, maybe three.

Lavender and Strawberries over Honey Cream

Yes, it is as fancy as it sounds. With dried lavender, honey strawberries and Greek yogurt in the mix, this is a recipe you might want to make to impress the parents. While this recipe does take a bit more time to make it is well worth the preparation. Mix together water, dried lavender and sugar and heat in a saucepan. Follow by adding to non-fat plain Greek yogurt and topping with strawberries. We suggest assembling it in layers in a glass bowl.
