Intern Kitchen: Debra’s Sweet Spinach Salad

Want to eat healthier, but have a sweet tooth? Then this is the perfect salad for you!

Combining the amazing health benefits of spinach and the sweet taste of grapes and sugar-coated almonds, this salad will keep you full and satisfied, and is a quick-make for classy co-eds on the go.

I use this recipe when I pack a lunch for work – so tasty!

Ingredients:

  • Spinach
  • White or purple grapes
  • Sugar-coated almonds

Directions:

  1. First, choose the right size salad container for you. This will depend on how much you usually eat and which meal you are making (i.e. lunch, dinner).
  2. Add in a few handfuls of spinach. Don’t be afraid to really pack it in there! Spinach is a great source of iron, something that many college ladies miss in their regular diets, but really need.
  3. Toss in some grapes – the juice from the grapes acts as the salad dressing, so add as many as you think you will need.
  4. Lastly, sprinkle on some sugar-coated almonds. Put the lid on your salad container, shake, it, and you’re ready to go!
