Intern Kitchen: Simple Summer Salsa!

Summer is often full of fun events: graduation parties, Fourth of July parties, and barbecues. If you need a recipe for something delicious you can bring to these parties, or if you’re hosting one yourself, this unique salsa is perfect. The ingredients make for a more textured and colorful salsa, and the recipe is so simple:

 

You Will Need: 

  • 1/2 cup of red wine vinegar           
  • 1/4 cup of olive oil
  • 1 packet of dry Italian dressing (I use Good Seasonings brand)
  • 1 can of corn
  • 1 can of black beans
  • 1 red onion (you may not need the whole thing, depending how big it is)
  • 1-2 tomatoes (again, depends how big the tomatoes are)

 

 

What to Do:

First, drain both the can of corn and the can of beans. Make sure to fully drain both, because otherwise the salsa may be too watery. Dump both into a large bowl (the bowl you will store the salsa in).

 

Then, chop both the onion and the tomato (or tomatoes, if you have smaller tomatoes) into very small pieces, and add them to the bowl.

Add the red wine vinegar, olive oil, and dry Italian dressing to the bowl, and stir it all up! That’s it! You can eat it right away, or store in the fridge until you want it.  Add some tortilla chips, and you now have a dish that will feed a good amount of people at a party, or just a great snack for yourself!
